DIRECTIONS
- Preheat oven to 375°F (190°C).
- In a bowl, whisk eggs with salt, pepper, and herbs.
- Sauté mushrooms and spinach in a skillet, then pour in egg mixture.
- Transfer skillet to the oven and bake for 15-20 minutes, until set.
