Healthy weeknight dish – Couscous!!!

Ingredients:
  • 1 1/2 lbs peeled & deveined shrimp
  • 1 1/2 cups whole wheat couscous (love M’hamsa brand)
  • 1/2 teaspoon crushed red pepper
  • Extra Virgin Olive Oil
  • sea salt & fresh ground pepper
  • 4 cups diced zucchini (about 4 medium)
  • 4 green onions, chopped finely
  • 2 T fresh mint, chopped finely
  • 1/2 c. basil, chopped finely
  • 1/2 c. fresh flat-leaf parsley
  • 2 cloves garlic, crushed
  • Juice of 2 limes
  • 1/2 cup diced organic feta cheese
 
Instructions:
  • Cook 1 1/2 cups whole wheat couscous according to package instructions (Love m’hamsa brand), drain & toss into a large serving bowl.
  • Heat 1/2 T oil in a cast-iron pan over medium heat, add zucchini & saute until edges are browned (8-10 mins) – add to couscous.
  • Toss shrimp into skillet – saute 2 mins on each side just until they turn pink & toss into a serving bowl.
  • Toss remaining ingredients into a smaller bowl: onions, herbs, garlic, lime juice , olive oil, crushed red pepper…stir to combine and then toss together with couscous, shrimp and zucchini in the serving bowl.
  • Add in feta cheese and toss everything together…enjoy!!

This is a fun dish and easy to interchange other veggies – some to try: cucumber, tomato, peppers, olives…so many variations! Use what you have. Couscous is fun and healthy but if you are GF, use another light GF grain like quinoa.
