- 1 1/2 lbs peeled & deveined shrimp
- 1 1/2 cups whole wheat couscous (love M’hamsa brand)
- 1/2 teaspoon crushed red pepper
- Extra Virgin Olive Oil
- sea salt & fresh ground pepper
- 4 cups diced zucchini (about 4 medium)
- 4 green onions, chopped finely
- 2 T fresh mint, chopped finely
- 1/2 c. basil, chopped finely
- 1/2 c. fresh flat-leaf parsley
- 2 cloves garlic, crushed
- Juice of 2 limes
- 1/2 cup diced organic feta cheese
- Cook 1 1/2 cups whole wheat couscous according to package instructions (Love m’hamsa brand), drain & toss into a large serving bowl.
- Heat 1/2 T oil in a cast-iron pan over medium heat, add zucchini & saute until edges are browned (8-10 mins) – add to couscous.
- Toss shrimp into skillet – saute 2 mins on each side just until they turn pink & toss into a serving bowl.
- Toss remaining ingredients into a smaller bowl: onions, herbs, garlic, lime juice , olive oil, crushed red pepper…stir to combine and then toss together with couscous, shrimp and zucchini in the serving bowl.
- Add in feta cheese and toss everything together…enjoy!!
