Doesn’t everyone need a “Go-to” recipe? Here is one of my favorites, and, as it turns out, one of Dr. Malik’s favorites too. Shakshuka is a popular breakfast dish in North Africa and in Middle Eastern countries. I love it because I always have the necessary ingredients on hand, and it serves many purposes: it’s vegetarian, loaded with healthy vegetables and a good source of protein. Shakshuka makes for a hearty brunch, an easy Sunday dinner, and I’ve even served it when entertaining. Plus, it makes my house smell wonderful! It’s a great “go-to” dish.
Shakshuka is so versatile and you can change it up by adding seasonal vegetables (eggplant, zucchini squash), spice it up with hot sauce or add meat or sausage if you choose. You can even give it a Mexican flair using jalapenos, cilantro and jack cheese and serve it with tortillas! Let your creativity run wild and enjoy this healthy dish! Give it a try!
· 1 Tbsp. Olive Oil
· 1 large yellow onion
· 2 yellow or orange peppers
· 2 cloves garlic
· 6 plum tomatoes (chopped) or 1 28 oz. can chopped tomatoes
· 1/2 cup tomato sauce
· 1 tsp ground coriander
· 1 tsp paprika
· 1/2 tsp ground cumin
· Pinch red pepper flakes or chili pepper
· Salt and pepper
· 6 large eggs
· ¾ cup crumbled Feta cheese (optional)
· 1/4 cup chopped fresh parsley
Chop the vegetables.
In a large skillet, heat the oil and sauté it in oil on medium flame until translucent. Add the pepper, garlic, tomato and tomato sauce and cook on low for about 15 minutes, stirring occasionally until thickened.
Stir in the spices, and cook another minute.
Make 6 “wells” in the sauce and gently drop a egg into each well. Season eggs with salt & pepper.
Add crumbled Feta if desired.
Reduce the heat, cover the pan and cook until the egg whites are set.
Garnish with fresh parsley. Serve family style with pita or crusty toasted bread.
