I made them vegan 🌱 by replacing the egg with flax and water:
•mix 1 Tbsp flax meal with 3 Tbsp water (let it sit 10 minutes to thicken)
•dip eggplant slices in flax mixture, then in almond flour. I mixed salt, pepper and garlic powder in with the almond flour
•lay on lightly oiled baking sheet and bake at 425 until crispy, flipping once halfway
